Is 4 lbs of corn sugar too much for a 5 gallon batch of beer?
I have been making beer now for less than a year. After trying several different kits I have found that I was having the same problem regardless of the type of kit. One was an after taste I just can’t explain but although you could tell it was beer, I didn’t like the flavor. My second problem was carbonation, I just couldn’t get any bite or head to the beer for the whole batch. I would let it set for several weeks at room temperature and in the frig but 90% of every bottle I opened was flat. I poured out several bottles of my last batch. Now I have a Coopers Kit that call for less than 3 lbs of a combination of DME and Corn Sugar combined. I have been using no DME and 4 lbs of Corn Sugar. Have I been killing my yeast with too much alcohol for bottling?
I don’t think you have been killing the yeast, just the taste. Corn sugar boosts the alcohol without any contribution to the taste. Stop following the kits’ instructions. For that matter, stop using kits. Get a nice, simple recipe from someplace like The New Complete Joy of Home Brewing*, by Papazian, preferably an all-extract ale to start with. Buy the ingredients separately. I can guarantee that the only corn sugar called for will be for priming. The LME and DME will not only feed the yeasts, they will give you taste. If you are still having problem with the lack of a head or head retention, you can add up to 10% of the malt extract as wheat malt extract without making a noticeable change in the taste.
