why won’t my home brew carbonate?

my home brew is something i have been making for over 5 years. i use the cooper’s can kits and pretty much only that. i use only regular granulated sugar and everything is sterilized. it tastes like beer, it packs a punch like home made beer, but as of late, i cannot get any bubbles. i use 1lt plastic browned beer bottles. i put 1 teaspoon of sugar into the bottle before bottling. i was putting in a tablespoon and it was working, but when it stopped, it just made my beer sweet, not bubbly. the caps are plasic screw on like from pop bottles. they are sterile and screwed on tight to seal. the seals are intact as far as i can tell. i don’t know what else to try. cooper’s has carbonating pellets, might try them.

There are a couple of reasons possible for lack of carbonation. I assume that the bottles were kept warm enough and that you had a tight seal. If the beer tasted sweet, you had plenty of sugar. As a matter of fact, I’d say that you had too much and the wrong kind. Table sugar makes beer taste cidery. Corn sugar is most often used, although certain styles call for other sugars, such as honey, molasses, or brown sugar. The only thing I can think of is the yeast. Either you got your alcohol content up high enough to kill the yeast (unlikely, unless you made barleywine) or you didn’t transfer yeast cells to the bottles. Try opening each bottle and putting in a pinch of an appropriate yeast (champagne yeast for barleywine, ale yeast for most ales). Then re-seal and wait a couple of weeks before chilling the beer.

Umm, you did remember to leave 1/2″ to 1″ of headspace, didn’t you?
