homebrewing from scratch?
I have been interested in home brewing beer for awhile and so one of my gifts this year turned out to be the premium Mr. Beer home brewing kit, which has the 2 gallon keg, 8 bottles with caps and labels, Pale Ale wort mix, yeast, booster, and the sanitizing mix.
I know that Lager ferments at a lower temperature than Ale, and it is winter time here and is too cold even inside the house to be able to brew Ale. What i would like to do is skip the Ale process and instead make my own Lager wort.
My question is basically would i be able to brew a homemade lager inside the little 2-gallon keg? most people get a glass carboy with the air lock valve; the keg is plastic, and there is a small air vent under the cap that allows the release of carbon dioxide during fermentation.
so, will this kit make a decent brew?
To generalize, two things differentiate a lager from an ale. Firstly, a lager yeast which tolerates fermentation temperatures in the low 50′s or high 40′s. Secondly, an extended maturation (lagering) period at around 33-34 degrees. The fermented beer is usually removed from the yeast and carefully transferred to a conditioning vessel that is reasonably impermeable to oxygen (corny keg or glass carboy).
You can make a convincing lager-like ale. Choose a yeast such as White Labs WLP001 or Wyeast 1056 and ferment at or below the low end of the yeast lab’s recommended temperature range (typically in the low 60′s). In order to pull this off you need to start with an ample quantity of yeast (1 pack or vial for 2 gallons is fine) and proper aeration of the wort.
The recipe is equally important. Avoid using citrusy, piny or resiny American hop varieties. Limit the use of flavor and aroma hops. The Pale Ale wort mix and booster be ok.
Since this is your first attempt at making beer, I’d keep it simple. Focus on sanitization, avoiding oxidation and ensuring that fermentation is complete before bottling. Because you’re fermenting at relatively low temperatures, it may take as much as two weeks or more for fermentation to be complete.
